Kent Techritz passionately believes bread is food for the soul.
“The energy and dedication of the baker is a vital ingredient in every loaf” he says.
The self taught baker started Flinders Bread on the Mornington Peninsula in 1983 and enjoyed 14 years of success at the helm of the wood fired oven he restored himself.
The next chapter of Kent’s life saw him travel Australia working with other sourdough bakers further honing his craft.
Kent returned to Melbourne and in 2009 set up shop once again to share his love of bread baking.
Bakery Lievito is his new venture, a wholesale business selling wholesome, organic white, sourdough loaves to a select group of retailers, cafes and restaurants.
‘Lievito’ is the Italian word for natural leavening, keeping things natural is a priority for Kent who favours organic and biodynamic ingredients and mills biodynamic wholegrain at the bakery.
